Risotto Mix with Saffron
Preparation: In a 10” to 12” pan, heat 2 tbsp of butter or olive oil and add the contents of one pouch, stirring briskly with a wooden spoon and sauté over medium heat or about 2 minutes. Optional: Add ½ cup of dry white wine and stir over medium heat until the wine is evaporated. Gradually add hot water (4 cups) so that the water covers the rice. Continue stirring, gradually adding more water so that the rice remains covered with liquid until cooked to desired tastes. Approximate cooking time for traditional al dente risotto is 14 to 17 minutes. Recommended cooking time is 18 to 22 minutes. Turn off the heat and stir in 2 tbsp of butter and about 1 cup of grated Parmesan cheese. Add salt to taste. Let stand for about 1 minute and serve 6-8 servings.
